I have a friend that wwoofed in France a couple years ago and she loved it.
speaking from a wwoofing in new zealand perspective, you can usually find old copies of the brochure lying around in hostels when you get there.
i’ve generally loved the wwoofing experience, even the time i got mauled by bedbugs. it’s all part of the fun. some of the hosts can be a little ’strange’ but if you go in with an open mind you’ll have a blast.
